Apricolina Vegan Cheese with Apricot

Introducing ‘Apricolina’, our vegan cheese with an apricot chutney centre.

Made from the finest whole, organic cashews and un-sulphured apricot pieces, Apricolina is a delightfully tangy and subtly sweet vegan cheese wheel that is perfect for any occasion, from a quick sandwich to a special family gathering.

What sets Apricolina apart is its unique flavour profile, cleverly playing with the classic cheese and pickle combo but with a more fruity edge. It turns out that cashews and apricots are soul-mates and this is the perfect partnership. It’s complete just as it is, even if you forgot to buy all the cheeseboard extras!

At Mouse’s Favourite we turn the apricots into a house-made chutney, combining them with organic apple cider vinegar and a small amount of unrefined brown sugar  to create a deliciously sticky, tangy, but gently sweet pickle. This mouth-watering concoction is sure to become a new favourite for anyone who loves the classic combination of cheese and pickle. We use unsulphured apricots which are naturally darker in colour than the more commonly seen bright orange ones,  but they give a more natural flavour and, more importantly, keep your vegan cheese clear of any preservatives.

To Serve:

For optimum enjoyment, remove the packaging and store open in the refrigerator for a day or so to firm up and re-form its delicious edible rind. We do understand if it’s hard to wait that long though! 😉
